Last night on fuzzy slipper night, or day for me  bear_tongue we were discussing what crumpets were...now being an aussie we eat them all the time, esp for breaky, so it was funny for me to try and describe them!  it seems they aren't so poplular in the US, so here is a recipe that i said I'd post.

i just googled this so if anyone makes them and knows of a better one, please post  :pray: i just buy the packs of golden crumpets from the shop lol

Sue Ann, I read the rest of the fuzzy slipper post and you have crumpets in texas!!!!  cool!!  And i loooove lemon curd MMMMmmmmmm.  i just eat it on a spoon sometimes lol

Homemade Crumpets


Serving size: unspecified
Cooking time: Quick with advance preparation



We used egg rings to make our crumpets; but for a thicker crumpet, use scone or biscuit cutters, and if available, crumpet or muffin rings.


Makes 12 crumpets

INGREDIENTS


1 sachet (7g) dried instant yeast
3 cups (450g) plain flour
1 teaspoon sugar
250ml milk
375ml water
½ teaspoon salt
½ teaspoon bicarbonate of soda



METHOD


Sift yeast, flour and sugar into medium bowl.

Heat milk and water together in small saucepan, or microwave, until it reaches blood temperature.

Whisk milk mixture gradually into flour mixture until a smooth batter is formed. Cover, allow to stand 1 hour.

When ready to cook, stir in salt and bicarbonate of soda.

Heat flat-plate of BBQ, griddle pan or heavy based frying pan until a small knob of butter browns and burns within 10 seconds.

Wipe burnt butter off BBQ plate. Make sure batter is consistency of pouring cream. If it is too runny it will run out of the moulds, if too thick, the bubbles that form and characterise a crumpet will not form. If too thin, thicken with a little extra flour. If too thick, thin with a little warm water. It is best to try cooking one crumpet before altering the consistency as you will have a better guide of what is too thick or too thin.

Place egg rings, biscuit cutters or muffin rings onto pan. Spray lightly with spray oil to lightly coat. Spoon 2-3 tablespoons mixture into rings or cutters. Do not fill too full as mixture will burn before it cooks through. You may have to reduce temperature of BBQ if bases are burning before tops have dried out.

Cook crumpet without moving until bubbles have formed on the surface and the top has a dried out look. Using a fish slice, flip egg ring and crumpet to cook top. Allow to cook only briefly to lightly brown the tops. Eat immediately with butter and home-made jam or honey, or caramelised bananas. For an interesting breakfast variation, try with grilled bacon and maple syrup!

The only thing that I do in the kitchen is dye fabric...
When I am in the mood I get out the George Forman grill and throw a salmon steak with rosemary twigs and some lemon....

Oh my GOSH... doesn't that look and sound GOOD!!!!!  To me it seems like a cross between an English Muffin and a pancake!  I HAVE to try this!  Thanks Sarah!

I would say that thats probably the best description kim....cross between a pancake and muffin...a thick pancake, moist in the middle and the yeast makes it rise so it isn't solid at all like the muffin...very moist and gooey inside but crunchy outside...now I'm going to have to go buy some!!!  Never hand made them before lol

Sarah - you've  made me nostalgic for my childhood.  For a special treat in winter, on Sunday nights we would have tea (dinner) in the lounge, where food was otherwise forbbidden.  We'd have tomato soup with cheese and toast, which mum used to toast on a long fork on the fireplace.  Then for pudding we'd have crumpets, again toasted on the fire and served with lots of butter and golden syrup. Yummmmm.  There is something about crumpets cooked on the fire that is magical.  Of course being a good Kiwi household in the 70s we'd watch "The Dog Show" and then Walt Disney which was an extra treat as tv was normally forbidden during meals.

I want me some crumpets!!

Thanks for the recipe for crumpets, Sarah. I love crumpets! but I have never tried to make them myself. I usually  put butter and jelly on them but syrup sounds delicious.
