Hi Caroline!
If you put fiberfill in small wads, then they'll be fine after washing, as well as plastic pellets.
Also it's a good idea to put plastic eyes and nose, since they usually are fixed with a clip and would not easily go off.
Think about fabric - some plushes would become very tangled after washing, so it's better to take either cotton mohair or sparse mohair and use delicate hand washing.

Is it ok to fill vintage bears not with wood wool, but with sheep wool, for example? Would that correspond to technique and collectors' expectations? What do you think?

This is Graham, teddy bear with big soul. He loves to play with puzzles and small bunnies bear_original

Graham is 29 cm tall when standing and 22 cm when sitting. The teddy bear is made of hand-dyed Japanese silk and German viscose. He is 5-way-jointed, filled with fiberfill and glass pellets. Most pellets are in paws and belly - you can feel beads through fabric, it feels soo nice!

Once we were all kids - funny, curious, looking for candies under the pillow or for other worlds under the chair. Little teddy bear cub Lennar is like that! He believes in Santa, elves and world piece, he adores sci-fi, and he would love to travel to the open space. Well, at this point, he would love to travel anywhere - to meet new friends, to see so many places he has not seen yet, and, who knows, maybe to make someone happier bear_original

Teddy Bear named Berty always dreamed of becoming a hedgehog. He even made a haircut to remind of a hedgehog. Berty has nice sense of humor, loves climbing chairs, and also flowers and counting petals.

I make my teddies of various fabrics, so this is only what I've heard from my friends who knit their teddies.
First, it might be really a problem to find small growler, I have not seen smaller than 40 mm wide yet. If you find smaller - please please please let me know bear_original 
You'll have to wrap it with some very thin fabric to prevent filling or wool stuck into small holes on the growler.
It might also be a good idea to make it jointed with special cotterpins and disks.
