Ok, so I've bought some chicken breasts and I'm going to make 2 for hubster tonight.
Do you have any good recipes?
He doesn't like mushrooms and I want something that is saucy but SUPER easy. Maybe something I can just brown and put in the oven etc.
I also have cream of celery and cream of brocoli soup if that helps.
I need your advice because I don't taste these things, so I have no clue.

Mom always made this and it's my favorite comfort food:
Put the breasts in a baking dish, sprinkle a little paprika, salt and papper on 'em.
Pour one can of soup (ex: crm of celery, crm of chicken, crm of brocolli, crm of mush) over breasts
Optional: prepare 2 cups of stuffing (I use quick and easy Stove Top Stuffing) and sprinkle over top
Bake at 375 for 25 mins, until bubbly. Serve with a side of veggies.

If you just sprinkle them with some salt and pepper, then brown the breasts in a skillet with a little oil/butter/margarine (whatever you have).... maybe through in a little chopped onion and/or garlic for flavor... You could just make some rice, put it in a baking dish, then put the browned breasts on top.... pour the cream of brocolli over the top.... sprinkle with a few bread crumbs... bake it at 350 or so for a good 30-40 minutes.... cut into one of the breasts at the thickest part to make sure it's no longer pink at all.....
Really that's an easy, and totally acceptable chicken dish!

Daph... you posted while I was writing! I think that would be totally good for hubs too! Just see whether you have rice or stuffing....
Marinading in something like Italian Dressing is always easy. If you don't have the "dressing" on hand just toss some dried seasonings (minced onion, garlic, oregano, salt, pepper, etc OR an all purpose seasoning) in a bag with some olive oil, toss in the chicken, seal the bag, shake to coat, and put in the fridge for 30-45 minutes. Take out the chicken and sear on stovetop OR if you have a grill pan/foreman grill better yet. (this is assuming you bought "boneless")

I love this chicken recipe:
Chicken Napoleon:
6 pieces boneless chicken breasts
salt and pepper
1 cup all purpose flour
3 whole eggs, lightly beaten
1 cup of bread crumbs
1 pound of butter
1/2 pound of pecan pieces
1/4 pound light brown sugar
Cut chicken breasts in half and flatten with the side of a cleaver. Season lightly and dip in flour, egg, than bread crumbs.
Chop pecans pieces very finely and mix with 1/2 pound of the butter and light brown sugar. Melt the other 1/2 pound of butter and sauté breaded chicken until golden brown on both sides. Set chicken in warm place and discard cooking butter.
Melt pecan mixture and stir until foamy. pour over chicken and serve immediately. Garnish with fresh seasonal fruits.
Serves 6.

Another recipe that is easy and wonderful:
Chicken Italian:
two boneless/skinless whole chicken breast (four pieces)
One package of dry Good Seasons Itailain salad dressing mix
Itialian bread crumbs
milk
Directions: prepare the Itialian dressing to package insturctions using vegitable oil, vinegar and water. Dip chicken pieces in milk and dredge in itialian bread crumbs.
Pour a third of the bottls of dressing in a 9/13 pan. place coated chicken breast in pan. Pour the remaining bottle of dressing on top of all the pieces.
Cover pan tightly with foil. Bake at 350 degrees for two hours.
I serve this with Uncle Bens wild rice.
***This may sound like a lot of dressing and overwhelming Italian taste but it isn't it is one of the best chicken recipes I ever made

Kim, great idea. You totally understand how I needed something easy and not too fuzzy, and if I don't have to cut up the chicken, even better. And I can use my soup!

I love to hear other people's chicken recipes! Especially ones you can make when there is like NOTHING in the house except frozen chicken breasts and condiments! That happens freqently around here!

I made the chicken with cream of broc. soup and rice, like Kim suggested. I had everything I needed in the pantry.
I was soo easy and he loved it! Plus, it was easy to make lots of leftovers. yay I think it's nice to feed him some good meat every once in a while besides ham etc.
