I just baked a Carrot cake and used a recipe my Grandmother always used and boy it is GOOD!
If anyone would like to bake one for Easter here it is......
In large bowl mix the following........
2 cups sugar
3/4 cups veg. oil
3 eggs
1 tsp. vanilla
3/4 cup sour cream or buttermilk...( I used sour cream..the Daisy brand)
2 cups grated carrots
1 can drained crushed pineapple
1 cup chopped walnuts
In a smaller bowl mix ........
2 cups flour
2 teaspoons baking soda
2 tsp. cinnamon
1 1/2 tsp. salt
Stir into the carrot mixture, pour into greased pan
Bake at 350 for 50- 55 minutes. Let cool
1/2 cup butter
2 8oz packs of cream cheese
1 tsp vanilla
3 cups powedered sugar
Blend until very creamy

Gosh Tami... that sounds good! I LOVE a carrot cake with pineapple in it... makes it so sweet and moist... the recipe that I have DOESN'T use pineapple... so I am glad to see this one!

I love carrot cake too yumm!- my receipe that I use has crushed pineapple in the cream cheese icing and that is very nice also.

Carrot cake is sooooooo good and the cream cheese icing is wonderful, it's snowing again here in Muncie Indiana, tomorrow may be a perfect day for carrot cake, thanks for sharing the recipe.

I agree with Kim, carrot cake with pineapple is the best. Try putting lemon zest/juice in your cream cheese icing instead of vanilla. The tartness of it balances really nicely with the richness of the cream cheese and complements the denseness of the cake.

You're making me hungry. If I bake a cake, THERE GOES THE DIET. Actually, I am experimenting with some recipes on my family. We have pizza night every Friday. I make my own pizza and my family is here. I have added a treat to the pizza. I am making a dessert of some sort for them to try. I am working on a project that I will be selling at the Farmer's Market beginning in June. I am doing a line of Organic Baked Goods. So far I have a wonderful carrot cake, a chocolate cake, brownies and a pineapple cake. I will be testing muffins and cinnamon rolls soon. Hopefully my items will be as big of a hit at the market as they are at home.
Mmm it sounds so nice Tami. Will make it over the Easter holiday.
